Lucky Charms treats are like Rice Krispie treats, just with a different cereal! It's a quick no-bake dessert that's made with just five ingredients and is especially perfect for St. Patrick's Day.
6tablespoonsunsalted buttersliced into tablespoon-sized pieces (85 grams)
1(16-ounce) package mini marshmallows
¼teaspoonsalt
1teaspoonpure vanilla extract
9cupsLucky Charms cereal(350 grams; plus extra marshmallows for topping)
Instructions
Line a 9x13-inch baking pan with aluminum foil, leaving some overhang for easy removal. Spray the foil with nonstick cooking spray or grease with butter and set aside.
Place a large saucepan over medium-low heat, add the sliced butter to the saucepan and allow to melt completely.
Once the butter is melted, add the mini marshmallows and salt. Continue stirring the mixture until the marshmallows are just melted and smooth. Remove from the heat and stir in the vanilla extract.
Add half of the Lucky Charms cereal and mix until well combined, then stir in the remaining cereal and continue mixing until fully combined.
Scoop the mixture into the prepared baking pan and press it down firmly into one even layer. If needed, grease your hands or a rubber spatula with nonstick cooking spray to make it easier. If desired, sprinkle about ½ cup of Lucky Charms marshmallows on top and gently press them in.
Allow to cool at room temperature for 1 to 2 hours. Then remove from the pan, slice into bars, and enjoy!
